Salted pork & shrimp fried rice
Ingredients:
- 2 tsp of sesame oil
- 1/4 of a red onion, finely diced
- 1/2 of a large carrot, finely diced
- ¼ cup of peppers, finely diced
- ½ cup of salt pork, cooked and diced
- 8 oz cold water shrimp
- 1 egg, slightly beaten
- 1 tsp fresh dill
- Salt & pepper to taste
- 1 cup frozen peas
- 2 cups long-grain rice cooked
- 1 tbsp fresh lime juice
- 1/4 cup soya sauce
- 2 green onions chopped
Directions:
- Place the sesame oil into a large skillet and heat until very hot, the oil will start to shimme
- Add the onions carrots and peppers and sauté for 2 to 3 minutes
- Add the salt pork, cook until warms through
- Push the salt pork and vegetables to the side and add the egg stirring quickly
- Once the egg has reached a scrambled consistency, stir in with the vegetable and pork
- Add the salt and pepper, along with the dill, add the peas and the hot rice. Stir to combine
- Add cold-water shrimps, lime juice and a quarter cup of soya sauce
- Taste and adjust salt, pepper, and soya sauce to liking. Top with green onion and serve.
